Volunteer Opportunity!

sat8Is there anyone in the Fredericksburg, VA. area that can HELP us haul produce? We need some volunteers! Also…mileage can be claimed on taxes when you are assisting a registered non-profit! It’s approximately 25-30 miles round trip and we need this weekly. A large pick-up truck or trailer would work best. Please contact Rikki’s Refuge at: mail@rikkisrefuge.org or call 540-854-0870. Please leave a voice mail if no one picks up, the office isn’t always manned!

AVOCADO CUCUMBER TOMATO SALAD

sat51 avocado, chopped
5 green onions
Juice of 1 lime
1 tsp. honey
1 clove garlic
2 tbsp. cilantro
Salt and pepper
1 large cucumber, chopped
3 tomatoes, chopped
Salt and pepper to taste
Make the dressing by blending the avocado, green onions, lime juice, honey, garlic, cilantro, salt, and pepper.
Toss with cucumber and tomatoes. Season with salt and pepper if needed
(You can also add chunks of avocado to the salad if you want! Vegetarians who eat cheese, try it with some fresh mozzarella!)

Happy Wednesday from Rikki’s Refuge!

1 tablespoon olive oil
1 large onion, chopped
1 stalk celery, chopped
2 carrots, chopped
4 cloves garlic, chopped
2 tablespoons chili powder
1 tablespoon ground cumin
1 pinch black pepper
4 cups vegetable broth
4 (15 ounce) cans black beans
1 (15 ounce) can whole kernel corn
1 (14.5 ounce) can crushed tomatoes
Heat oil in a large pot over medium-high heat. Saute onion, celery, carrots and garlic for 5 minutes. Season with chili powder, cumin, and black pepper; cook for 1 minute. Stir in vegetable broth, 2 cans of beans, and corn. Bring to a boil.
Meanwhile, in a food processor or blender, process remaining 2 cans beans and tomatoes until smooth. Stir into boiling soup mixture, reduce heat to medium, and simmer for 15 minutes.
