EASY SPICY BEAN SALSA

EASY SPICY BEAN SALSA
(Serve with tortilla chips!)
1 (15 ounce) can black-eyed peas or garbanzo beans
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained
1/2 cup chopped onion
1/2 cup chopped green or yellow bell pepper
1 (4 ounce) can diced jalapeno peppers
(you can use chopped fresh jalapenos instead, as many as you prefer!)
1 (14.5 ounce) can diced tomatoes, drained
(you can use chopped fresh tomatoes instead! about 2 cups)
1/2 cup Italian-style salad dressing
1-2 teaspoons minced garlic
Red Pepper Flakes to taste for “heat” (optional)
In a medium bowl, combine black-eyed peas, black beans, corn, onion, bell pepper, jalapeno peppers and tomatoes. Season with Italian-style salad dressing and garlic; mix well. Cover, and refrigerate overnight to blend flavors.

And tell all of your friends that we have cats for adoption at Re-Tail! Yetti is an approx. 3-year-old red tabby (short hair). She ignores the other cats, but, under no circumstances, can she live with a dog! Candy is about 4 years old, and is a medium haired red tabby. The shyest of the group, she is incredibly sweet! She’s good with cats, and probably good with dogs. She likes to watch t.v. and can frequently be found admiring herself in the mirror! Tiffy is a medium haired black cat (with a bit of white on her chest). I call her my little stinkbug! She’s playful, loving, curious…she’s good with cats and dogs. She loves to play with toys! Claudia is about 11 months old. She’s a calico. She’s good with cats and dogs, although she’s too interested in everything around her to really care about them. She loves to play with toys, especially interactive toys! Sammy, well, she would not sit still for a photo. She tried to take the camera away from me, and when I won that match, she turned to wrestle with Candy! She was so funny — chew, chew, roll around, then stop and groom Candy. Then roll her over again, play around, then stop and groom her again. Sammy is a snowshoe, about 4 years old. She loves people! She loves toys and attention! She is good with both dogs and cats. Let’s get these girls in to their furrever homes!

POWER COOKIES

4 cups rolled oats
1 (15 ounce) can cannellini beans, drained and rinsed
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon baking powder
1 cup applesauce
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup chopped prunes or dried cranberries or dried cherries (or a combo of all 3)
1/2 cup flaked coconut
1/2 cup raisins
1/2 cup chopped walnuts
Preheat the oven to 325 degrees F. Grease cookie sheets. Grind the oats in a blender until resembling coarse flour. Puree beans and applesauce together. In a medium bowl, combine the ground oats, baking powder, baking soda and cinnamon; blend into the bean/applesauce mixture. Stir in the prunes, coconut, raisins and walnuts. Drop dough by heaping spoonfuls onto the prepared cookie sheet. Bake for 10 to 15 minutes in the preheated oven, until golden. Cool on baking sheets for 5 minutes then remove to wire racks to cool completely.

This week’s (7/27/14 – 8/2/14) Staff/Volunteer of the Week for Rikki’s Refuge is RON HERFURTH! Thank you Ron, for everything you do! We appreciate you!  🙂

Ron, Rikki’s Director of Serving Cats, simply came on a tour many many years ago. And he fell in love. With a beautiful long hair calico. He came back the next weekend to inquire about adoption. Discovering he was a fabulous Crazy Cat Man, he was approved and Cassey went to her “furrever” home. And the next weekend Ron came back … and started helping to build new and improved Cat Houses. He’s been coming back just about every weekend since and has really made Feline Fields an outstanding place. He’s now building Opie and Timmy and Sylvestra a playground of their very own! Ron was the architect and builder of Vincent’s Tree House.
