My name is Smokey Joe and I live at Rikki’s Refuge in Rapidan, Virginia. Did you know that over 1300 animals of 22 species live here with me? Included in that big bunch of critters are over 600 cats just like me! We’re having a pretty rough summer this year. We need help! We need help with food for all of us. We need help with supplies. Is there anyone in the Fredericksburg, VA. area that can HELP us haul produce? We need some volunteers! Also…mileage can be claimed on taxes when you are assisting a registered non-profit! 1 avocado, chopped
5 green onions
Juice of 1 lime
1 tsp. honey
1 clove garlic
2 tbsp. cilantro
Salt and pepper
1 large cucumber, chopped
3 tomatoes, chopped
Salt and pepper to taste
Make the dressing by blending the avocado, green onions, lime juice, honey, garlic, cilantro, salt, and pepper.
Toss with cucumber and tomatoes. Season with salt and pepper if needed
(You can also add chunks of avocado to the salad if you want! Vegetarians who eat cheese, try it with some fresh mozzarella!)
